Uncooked Fruit Pie

pie crust
1+ cup macadamia nuts (shelled)
raw local honey
olive oil

Grind nuts until fine.  Mix with enough honey and oil to hold it all together.  Press into olive oiled pie dish.

filling
3-4 c fruit of choice (mangoes and bananas are yummy)
1/2 lemon (to keep fruit from browning)
raw, local honey

Mix honey and lemon juice together in bowl.  Peel and slice fruit and completly submerse in honey mixture.  Fill pie plate with fruit.  Serve immediately.

Avocado Mango Salad

6 oz salad mix
2 avocados, diced
1 mango, diced
1/3 cup cilantro leaves
1/2 red onion, diced
vinaigrette of choice

Toss all ingredients together, adding vinaigrette or dressing of choice.

Arugula Fruit Salad

6 oz baby arugula
3 T mint leaves
2 mangoes, sliced
1 papaya, sliced
4 pineapple slices
dressing

dressing
6 T fruit juices (passion fruit juice is a must)
1 T minced green onion
2 T olive oil
Kauai sea salt

Toss arugula with dressing until well coated.  Arrange fruit slices on plate and top with arugla greens.
