Banana Pancakes

buckwheat flour
millet flour
Kaua’i sea salt
2-3 T safflower oil
water
1 egg
4-5 ripe apple bananas

Add these ingredients together until you have a thick batter.  We use a cast iron skillet to fry them up.  The ripe bananas make these pancakes so sweet that we don’t use anything on top of them!  Jack Johnson’s song, “Banana Pancakes,” was the inspiration for these.

Frozen Chocolate Bananas

ripe apple bananas (1 for each person)
Hershey’s cocoa
local, raw honey
water
wooden kebab sticks

Peel ripe bananas and cut off small part of bottom end.  Stick kebab stick through that end and push into the banana, stopping when you think you’re near the top.  Freeze overnight on plate with covering.
To make the chocolate, mix cocoa, honey and water together to taste.  Drizzle a thick layer of it on top of the bananas or dip the bananas in the chocolate.  Freeze until serving.

These make great soccer snacks and birthday treats!

Baby Romaine with Cilantro Lime Dressing

baby romaine
1/3 c scallions
1 c cilantro leaves
1 c cherry tomatoes
1/2 c goat cheese, crumbled

dressing:
2T lime juice
1 garlic clove, crushed
Kaua’i sea salt
4T olive oil

Add together garlic, lime juice, olive oil, sea salt.  Let sit for half an hour to allow flavors to blend.  Toss dressing with remaining ingredients in a bowl and serve immediately.

Macadamia Nut Banana Split Sundae

15 macadamia nuts
chocolate syrup
2 apple bananas
vanilla Rice Dream

First you take the mac nuts and you crunch them or chop mac nuts in half.  Put the Rice Dream in a cup.  Slice bananas in half and put them on the sides.  Then put the chocolate syrup on and toss all the mac nuts on top.  Eat it.

Carob Shake

4 cups almond milk (see recipe)
14 dates (1/2 that many if large dates)
3-4 T carob powder
4 frozen apple bananas, sliced

If not using a heavy-duty blender, let bananas thaw a little first.  Add all ingredients and blend well.  Tasty.

Kaua’i Smoothie

1 handful macadamia nuts
1 handful dates
1 apple banana (optional)

The only thing that would make this smoothie richer would be butter.  Yum.

Banana Shake

4 ripe apple bananas
4 cups almond milk

Peel bananas and place in blender.  Add almond milk and blend.

almond milk
1 c almonds, soaked in water overnight
water
raw local honey
Discard soak water.  Put almonds in blender with 5 cups fresh water.  Blend.  Strain out almonds and blend in some raw local honey.  Refrigerate for up to 2 days (stir together if it separates).

Uncooked Fruit Pie

pie crust
1+ cup macadamia nuts (shelled)
raw local honey
olive oil

Grind nuts until fine.  Mix with enough honey and oil to hold it all together.  Press into olive oiled pie dish.

3-4 c fruit of choice (mangoes and bananas are yummy)
1/2 lemon (to keep fruit from browning)
raw, local honey

Mix honey and lemon juice together in bowl.  Peel and slice fruit and completly submerse in honey mixture.  Fill pie plate with fruit.  Serve immediately.
