Avocado, tomato, fresh basil dip

3 avocados, peeled and pitted
5 cherry tomatoes
handful of fresh basil leaves
water

Place all ingredients into blender.  Add water until desired consistency.  Use as a dip for just about anything.

Roasted Tomato Pesto

1 cup roasted tomatoes (see recipe under tomatoes)
1/2 c cold pressed extra virgin olive oil
1 handful basil leaves
1 T fresh oregano (or 1 t dried)
1 c tomato puree

Blend all ingredients together.  Add salt as desired.

Green Juice

4 green apples
1/2 pineapple
1 lemon
1 large piece ginger
small bunch parsley

Juice all ingredients and enjoy!

Creamy Avocado Soup

4 ripe avocados, peeled and chopped
1/2 c lime juice
1/4 c cilantro (no stems)
1.5 c sour cream
2 green onions (only the white part)
3 c chicken stock
1 t Kauai sea salt
jalapeno pepper to taste (seeded first!)

Puree avocado, lime juice, green onions and cilantro.  Add sour cream and puree.  After pouring into bowl, add stock, salt.  Carefully add desired amount of pepper.  Refrigerate before serving.  Garnish with cilantro and dollop of sour cream.

Banana Shake

4 ripe apple bananas
4 cups almond milk

Peel bananas and place in blender.  Add almond milk and blend.

1 c almonds, soaked in water overnight
water
raw local honey
Discard soak water.  Put almonds in blender with 5 cups fresh water.  Blend.  Strain out almonds and blend in some raw local honey.  Refrigerate for up to 2 days (stir together if it separates).

Uncooked Fruit Pie

pie crust
1+ cup macadamia nuts (shelled)
raw local honey
olive oil

Grind nuts until fine.  Mix with enough honey and oil to hold it all together.  Press into olive oiled pie dish.

3-4 c fruit of choice (mangoes and bananas are yummy)
1/2 lemon (to keep fruit from browning)
raw, local honey

Mix honey and lemon juice together in bowl.  Peel and slice fruit and completly submerse in honey mixture.  Fill pie plate with fruit.  Serve immediately.

Tropical Smoothie

2 large papayas (peeled and seeded)
1 avocado (peeled and pitted)
1 t raw local honey

Blend all ingredients together with 1/2-3/4 cups water.  This smoothie will be creamy.

Arugula Pasta Salad

1 box penne, rotini or shell pasta
1/2 c roasted cherry tomatoes (see recipe under tomatoes), cut into thin strips
1 roasted red sweet bell pepper, cut into thin strips
1 jar marinated artichoke hearts. cut up
6 oz arugula
Kauai sea salt
olive oil

vinaigrette
7 T olive oil
2 T apple cider vinegar
1 t honey
1/2 garlic clove, minced
1/4 onion, minced

Prepare pasta according to package directions.  While cooling, toss with olive oil to avoid sticking.  In bowl, add all ingredients and toss to combine.  Drizzle with a generous amount of vinaigrette.

Arugula Salad with Watermelon

5 cups watermelon cubes
1/4 c goat cheese, crumbled
1/4 nuts

vinaigrette
1 T lemon juice
4 T olive oil
Kauai sea salt

Toss all ingredients together gently to coat.
