Salsa Muy Bueno

onion as desired
1 bunch cilantro
sea salt to taste
1-3 cloves garlic
1-2 chiles (with a knife, scrape out seeds for milder flavor)
half a lemon, squeezed
cherry tomatoes

Put all ingredients in a blender and blend on low speed until thoroughly blended. Salsa is not an exact science, so have fun with it! Comer con amigos.

Pasta with Kale

1/2 cup red pepper slivers
½ cup onion, finely chopped
Garlic to taste
1 package pasta
3-4 cups washed kale, stems cut
Olive oil

Saute the onion and peppers in a small
amount of olive oil. Lightly press the oil from the peppers and onions with
a paper towel.

In another saucepan, sauté garlic with a small amount
of olive oil. Add kale. Make sure the kale is tossed
so it is covered with the oil. Add water and cover
with a saucepan lid. Finish cooking in the steam.
Important: Watch the color of the kale. Don’t let it turn brown.

Cook the pasta. Add it to the onion
mixture. Mix in the kale/garlic mixture and serve.

Goat cheese would make this even yummier!

Pasta Pomodoro with Cherry Tomatoes and Basil

(this is a favorite of our family)

1-2 pints cherry tomatoes
1-2 cloves garlic
Extra virgin cold pressed olive oil
Angel hair pasta
Basil
Kauai sea salt to taste

Start pasta cooking.  In a pan. saute the garlic in a little olive oil, then add the sliced tomatoes and cook until they are heated through. Salt as desired. Add fresh basil for the last minute of cooking-no more or it will go black and limp.  We sometimes make this without cooking in a food processor.

After draining pasta, toss tomato mixture, adding some extra olive oil to keep pasta from sticking together. Garnish with fresh basil and serve immediately.
